Every banana you've ever eaten is a clone of the same plant. The wild one had hard seeds and almost no flesh, we bred it into something so soft, seedless and sweet it can't even reproduce on its own anymore. Corn came from a scrubby little grass, then got broken down into syrup, starch and oil hidden in thousands of products. Wheat got reshaped too, the gluten profile modified, bred for yield and speed, the bread rushed through fast fermentation to cut corners. We changed the food, radically, in a blink of evolutionary time. So when more and more people say they don't feel good eating modern bread, maybe we're asking the wrong question.
