America just admitted something obvious: four companies control 85% of its beef, up from 36% a generation ago, and maybe a farmer should be allowed to process and sell his own meat. It took an executive order to say it out loud. Europe does the opposite. Politicians here won't stop talking about local food and saving small farmers.
