Ditch meat, eat plants. Fine. Now go to the Alps and look for a wheat field. You'll find slopes too steep for a tractor, grass, cows, and a cheese tradition that has fed those valleys for centuries. Same on the Mongolian steppe, in the Scottish Highlands, in the dehesas of Extremadura. Nobody living there is choosing between a cow and a field of lentils. It's a cow, a sheep, a goat, or nothing.
